Ms. Martinez wants to feature insect dishes based on Hispanic foods but grown locally, such as a ceviche-like cricket dish and soft tortilla tacos with meal worms and green salsa. Some of the insects will be mixed or even ground, to try to get around the psychological fears that comes from biting into a crunchy cricket. “I think if you present it in a way that the insects aren’t as obvious, people will be more open to trying it,” she says.
